Mexican Esquites

Esquites are a classic Mexican street food made with tender corn kernels cooked in a flavorful broth and topped with creamy, tangy and spicy ingredients. Traditionally served in cups by street vendors across Mexico, this dish is the off-the-cob version of elite and delivers a perfect balance of richness, heat and brightness in every bit.

Serve it as a side dish, snack, or topping for tacos, esquires are simple to make and pack with bold authentic flavor.

 

Servings: 4 Esquites

Ingredients:

Esquites:

  • 3 cups Corn Kernels

  • ½ White Onion (finely chopped)

  • 2 cloves Garlic (finely chopped)

  • 1.5 tbsp Butter

  • Salt (to taste)

  • Epazote (optional)

  • 2.5 cups Water

Toppings:

  • ¼ cup Cotija Cheese

  • ¼ cup Sour Cream

  • ¼ cup Mayo

  • Lime Juice (to taste)

  • Cilantro (Chopped, to taste)

  • Sabor a Mexico Salsa (your choice)

Instructions:

  1. Add butter, onion and garlic to frying pan and cook until translucent.

  2. Mix in corn kernels and cook for 5 minutes over medium heat.

  3. Add water, epazote, and salt and boil for 20 minutes.

  4. Drain water using a strainer. Serve corn in cups, adding the toppings that you would like, and mixing well. Make sure to serve hot!
